Minerals: Magnesium, manganese, iron, calcium and potassium

Today, I prepared one more recipe with Spinach that is spinach stir fry. It is good combination with Rice and ghee/ Chapathi/ Roti

Let’s start with ingredients and follows procedure

Ingredients:

Spinach – 1 bunch

Onion – one medium – finely chopped – 1 cup

Masala powder:

Roasted chickpea – 2 tb sp

Dry coconut powder – 4 tb sp

Coriander seeds – 1 tb sp

Sesame seeds – 1 tb sp

Red chilly powder – 1/2 tb sp

Garlic cloves – 2 medium

Salt – to taste

For Tempering:
Mustard seeds/ Avvalu – 1/4 tea spoon
Cumin seeds/ Jeera – 1/2 tea spoon
Urad dal/ Minapappu – 1/4 tea spoon
Bengal gram/ Senagapappu – 1/4 tea spoon
Curry leaves – 4 to 5
Oil – 1 tb sp

Procedure:

  • Heat frying pan on medium heat
  • Add oil, tempering and onion
  • Let it fry for 1-2 minute and saute in between
  • Blend all the mentioned ingredients in Masala Powder.
  • Make smooth powder and keep it aside
  • Wash spinach and chop them
  • Add chopped spinach in pan on low to medium heat
  • Saute 30 secs
  • Add Masala Powder and give it a mix
  • Saute and cook for 2 mins
  • Dish out in a bowl
  • Spinach stir fry is ready to serve
  • Serve it with hot rice & ghee/ pulka/ chapathi/ roti 😀
