Spinach Dum Biryani/ Palak Dum Biryani

Ingredients:

Basmati Rice – 1 cup

1 cup rice = 2 cups of waterΒ 

Spinach/Palak – chopped – 1 cup

Tomatoes – chopped – 1 cup

Coriander – chopped – 1/2 cup

Curd – 1/2 cup

Fried onion – 1 cup

Fried cashew nuts – 2 tb sp

Green chillies paste (6 to 8) – 2tb sp

Ginger-Garlic paste – 1/2 tb sp

Bay leaf Β – 2

Cloves – 3 to 4

Cinnamon Β – 2 small pieces

Cardamom – 2

Turmeric powder – 1/4 teaspoon

Salt – as per taste

Oil – 2 tb sp

Ghee – 2 tb sp

Procedure:

  • Wash basmati rice and soak 2 cups of water for half an hour
  • In medium heated frying pan
  • Add oil
  • Add cloves, cinnamon, cardamom and bay leafs
  • Saute for 30 secs
  • Add ginger-garlic paste and green chillies paste
  • Saute for 1 min
  • Add chopped tomatoes and saute till mashy
  • Add chopped spinach and saute till become smooth
  • Add curd, salt and pinch turmeric powder and saute till consistency becomes thick
  • Keep this aside
  • Cook rice upto 80% to 90%
  • Now take deep bigger rice cooking pan
  • Spread spinach Gravy , rice, fried onion and ghee
  • Repeat the same process till rice completes
  • Like this make 3 layers on last layer toppings fried onion, cashew nuts and ghee
  • Cook in steam for 10 to 15 mins on low heat
  • Spinach Dum Biryani is ready
  • Serve it on special occasions/ In lunch/dinner @ Party time with raita/ mirchi ka salanπŸ˜ƒ
