Vegetable Poha/ Pressed Rice/ Attukulu


Pressed rice/ Poha / Attukulu – 2 cups

Carrot chopped – 1 cup

Beans chopped – 1 cup

Onion chopped – 1 cup

Tomatoes chopped – 1 cup

Tamarind paste – 1 tb sp

Turmeric – 1/2 tb sp

Fresh grated coconut – 2 tb sp

Mustard seeds – 1/4 tb sp

Jeera / Cumin seeds – 1/4 tb sp

Urad dal – 1/2 tb sp

Bengal gram – 1/2 tb sp

Curry leaves – 6

Green chillies – 6

Roasted ground nuts – 1 tb sp

Coriander chopped – 1 cup

Oil – 2 tb sp

Salt – As per taste


  • Add Poha in a bowl wash with water and sprinkle little amount of water drain water after 5 mins ( check the pressed rice is easy to break or not ). Keep it aside
  • In mixer grinder add salt, green chillies and grated coconut. Keep this paste aside
  • Take a Frying pan add oil let it heat for one minute
  • Now add Mustard seeds, Jeera, Urad dal, Bengal gram saute it then add curry leaves and green chillies
  • Add chopped carrots and beans fry for few seconds and then add onion saute it until the color changes to golden brown
  • Next add chopped tomatoes saute it for one minute after that add turmeric powder
  • Now add coconut paste and saute for few seconds then immediately add tamarind paste.
  • When the oil comes out it is well cooked at this moment add soaked Poha and saute for 3 to 5 minutes
  • Now add Roasted ground nuts and mix well
  • Switch off the burner and add chopped coriander
  • Serve it with Spicy Roasted chickpea powder /Β Pappula podi
