Cauliflower is good for health and it is high in vitamin c. You can prepare many varieties with cauliflower such as cauliflower fry, Gobi Manchurian, chilli Gobi, curry, dry Gobi,Β Gobi Paratha, Gobi Butter Masala etc.,

Almost every dish prepared with cauliflower is delicious πŸ˜‹ it’s healthy when you have it stir fry or boiled or half boiled. It’s is a special side dish which is served in restaurants in India and other places too.

This is best curry for Gobi lovers and it’s best combination with Phulka, Roti, chapathi, Naan & Butter naan, etc.,

I say it’s best to have such delicious food once in a month/ twice ☺️. I love gobi varieties & I eat cauliflower in any way either in fry, Paratha, curry , Gravy curry you prepare in anyway or method I eat it nicely.

One of the most favourite Curry is Gobi Butter Masala where ever I go in any restaurant I will search for Gobi varieties in menu.

Cauliflower is the main ingredient which is sauced with spices and butter πŸ˜€

Vitamins: C, B6

Minerals : Iron, calcium, potassium, magnesium & sodium andΒ It is good in protein & fiber

Today, I prepared cauliflower/ Gobi Butter Masala which is a lovely recipe to all of your family members.

Let’s start with ingredients and follows Procedure

Ingredients:

Cauliflower/ Gobi – 500 gms – Florets

Gravy:

Butter – 60 gms

Onion – 1 medium – 1/2 cup – diced

Tomatoes – 2 – 1/2 cup – Diced

Cashew nuts – 10 soaked – paste

Curd – 1/3 cup

Milk – 1/2 cup

Cloves – 2

Cinnamon – small piece – 1

Cardamom – Green – 1

Bay leaf – 1

Ginger-garlic paste – 1/2 tb sp

Red chilly powder – 1/2 tb sp

Coriander powder – 1/2 tb sp

Jeera / cumin powder – 1 tsp

Garam Masala Powder – 1/2 tsp

Salt – 1/2 tb sp

Kasuri Methi / Dry fenugreek leaves – 1 tsp

Coriander Leaves – 6 tb sp – chopped

Pre-Preparation:

Tomato-Onion Puree:

  • Heat skillet pan on medium heat
  • Add 1 tsp butter, diced onion & tomatoes πŸ…
  • Saute well
  • Cook 10 mins till soft
  • Let it become cool
  • Blend it till soft & smooth puree
  • Tomato Puree Ready

Cashew nuts paste:

  • Take 10 cashew nuts
  • Split into half & soak for 20 mins in water
  • Blend them & Make smooth paste
  • Cashew nuts paste ready

Roasted cauliflower:

  • Heat skillet pan on medium heat
  • Add 1 tb sp butter & cauliflower florets
  • Saute till color changes to golden brown & crunchy texture
  • Roasted cauliflower florets ready

Procedure:

Let’s start preparing Gobi Butter Masala:

  • Heat skillet pan on medium heat
  • Add remaining butter, cloves, cinnamon, cardamom, Bay leaf & ginger-garlic paste
  • Saute well
  • Add onion- tomato puree
  • Saute & cook 10 mins
  • Add red chilly powder, coriander powder, cumin powder, Garam masala powder & salt
  • Mix well & cook 5 mins
  • Remove cloves, cinnamon, cardamom & Bayleaf from GravyΒ 
  • Next Add roasted cauliflower florets and mix well
  • Cook 5 mins
  • Next add cashew nuts paste, curd & milk
  • Mix well
  • Add crushed kasuri methi powder/ dry fenugreek leaves
  • Mix well & cook 5 mins
  • Turn off Cooktop / Burner
  • Add chopped coriander leaves
  • Mix well & Serve hot
  • Cauliflower Butter Masala is ready to serve
  • Serve it with any kind Roti such asΒ Chapathi/ RotiΒ , Naan, Butter Naan & Phulka
