Side Dish : Curry: South Indian Style

Any Indian meal contains Dal, curry, rice, roti and curd itβs so authentic and traditional to have a meal with curries and it gives you so much satisfaction with happiness. All these curries which I was prepared are the same process following from many generations and learnt from others like grand-grand parents. Itβs like a chain process and love to know more and more from grand parents.
Curry is a side dish either wet/ dry prepared out of vegetables/ leafy vegetables. It should be cooked and make sure it contain some amount of nutrients in it for good health diet. You can dip roti in curry and eat, you feel the flavours of it really delicious π
In South India and north India their should be a side dish in every meal, this Curry suits with any rice/jeera rice/ fresh hot rice with ghee if you like to have it with any phulka/ Roti then itβs great combination π
Coming to Recipe, I mixed radish and cauliflower it relished well with Chapathi/ Roti. If anyone of you doesnβt taste yet must try!
Today I prepared easy and mild curry recipe with cauliflower, radish, spices and onion- tomatoes , i hope you like it
Let’s start with Ingredients and follows Procedure
Ingredients:
- Cauliflower – florets – cooked – 500 gms
- White Radish – grated – 300 gms
- Onion – 1 – finely chopped
- Tomatoes – 2 – chopped
- Red chilly powder – 1 tsp
- Salt – 1/2 tb sp
- Cumin powder – 1 tsp
- Coriander powder – 2 tsp
- Vangi Bath Masala Powder – 1/2 tb sp
- Turmeric powder – 1/4 tsp
- Curry leaves – 4-5
- Cumin seeds – 1 tsp
- Coriander leaves – 1/2 cup – chopped
Procedure:
How to cook cauliflower florets ?
- Heat a mixing bowl with 1.5 Ltrs water
- Add 1 tsp salt and 1/8 tsp turmeric powder
- Boil water
- Add cauliflower florets
- Close with lid and cook 5 mins
- Turn off heat and strain water
- Cauliflower florets cooked well. Keep it aside
Curry process:
- Heat pan over medium heat
- Add oil, cumin seeds and curry leaves
- Let them splutter
- Add onions and saute 1 min
- Add tomatoes and saute 1 min
- Add grated mooli / radish , Saute 5 mins
- Next add red chilly powder, vangi bath masala powder , salt, turmeric powder, cumin and coriander powder
- Mix well and cook 1 more min
- Add cooked cauliflower
- Mix well and cook 2 mins
- Turn off heat / Cooktop
- Add chopped coriander leaves and mix well
- Serve it with rice / roti
- Happy cooking and enjoy your day π

Note:
- Adjust spices according to taste
- Checkout vangi bath masala powder in below section
- If you doesn’t like to add vangi bath masala powder you can add Garam Masala Powder..
- While cooking radish Don’t add water because with the help of moist in radish it cooked well.. no need to add extra water
- If you don’t have radish at home you can skip it and prepare with rest of the ingredients..

To protect nutrients in cauliflower I blanched them and used in curry..so it takes less time to cook.. πThank you
