Side Dish: Gravy Curry : Mixed Vegetable Kadai πŸ‘Œ

Servings: 2 Kadai’s

Duration: 40 mins

Curry is either wet/ dry prepared out of vegetables/ leafy vegetables. It should be cooked and make sure it contain some amount of nutrients in it for good health diet.

Side dish is common for any Indian meal but varies the method or process from state to state. Previously, I had posted many curries as you liked them and motivated, so I thought to make a healthy curry tho it’s delicious which is Mixed Vegetables Kadai 😍

I’m presenting you a popular and succulent Gravy curry for Naan/ Roti/ Rice / Phulka.. the Taste absolutely makes you mesmerize and it loaded with full of vegetables. They are cauliflower, potatoes, carrot, beans, capsicum etc., all these vegetables are half cooked because I would like to protect nutrients which helps you can eat a healthy food.

I clearly explained how to make veggies half cooked in below section so they remain good in taste and healthy too.Β I’m out of words I love this Kadai a lotΒ you should prepare and must taste it once I’m sure you fall in love with this mixed Vegetables Kadai ☺️

Today I prepared Gravy curry with full of vegetables , spices and fresh heavy cream. To make it you need lots of patience and at the end of curry I hope you will definitely enjoy your Kadai

Let’s start with ingredients and follows Procedure

Ingredients:

Mixed Vegetables:

  • Cauliflower – Florets – 20
  • Beans – 15 – chopped – 1 inch
  • Carrots – 1 – chopped – 1 inch
  • Potatoes – 2 – medium – diced
  • Green peas – 1/4 cup – frozen
  • Capsicum/ Green Bell pepper – 1 – petals
  • Paneer – 8 pieces – diced (Fry in Butter & Keep aside)

Gravy:

  • Onion – 1 – medium – diced
  • Tomatoes – 2 – medium – diced
  • Green chillies – 4 – chopped
  • Ginger – 2 tb sp – chopped
  • Ginger – peel off – 3 cloves – chopped
  • Cashew nuts – 6 to 7 – soaked ( 20 mins )

Spices:

  • Red chilly powder – 1/2 tb sp
  • Coriander powder – 1 tb sp
  • Garam masala – 1 tsp
  • Kasuri Methi / Dry fenugreek leaves – 1 tb sp
  • Turmeric powder – 1/4 tsp
  • Salt – 1 tb sp

Other:

  • Cloves – 1
  • Cinnamon stick – 2 – small pieces
  • Bay leaf – 1
  • Fresh cream – 80 ml
  • Coriander Leaves – 1/2 cup
  • Oil – 3 tb sp

Procedure:

Prepreparation:

Gravy:

  • Heat pan over medium heat
  • Add 1/2 tb sp oil
  • Add all gravy ingredients except cashew nuts
  • Saute 5 mins
  • Keep it aside & Let it become cool
  • Add in mixer grinder and make smooth paste along with cashew nuts
  • Add 1 cup of water when blending
  • Keep gravy aside

Half cooked Vegetables:

  • Heat skillet pan over low to medium heat
  • Add 1/2 tb sp oil
  • Add all vegetables
  • Saute 1 min
  • Cook 5 to 7 mins by closing with a lid
  • Take out veggies in a plate
  • Let them become cool
  • Keep it aside

Process of making Mixed Vegetables Kadai :

  • Heat Pan over medium heat
  • Add rest of the oil
  • Add cloves, cinnamon & bay leaf
  • Saute and add red chilly powder, turmeric powder, coriander powder, Garam Masala and salt
  • Saute 30 secs
  • Add Gravy
  • Mix well
  • Cook 2 mins
  • Add half cooked Vegetables
  • Mix well
  • Cook 3 mins
  • Add fresh cream &Β Mix well
  • Turn off heat / Cooktop
  • Add kasuri methi and coriander leaves
  • Mix well
  • Close with lid for 10 mins, so that flavours will be set to curry
  • Serve Mixed Vegetables Kadai with any chapathi/ phulka/ Naan/ Roti
  • Happy Cooking & Enjoy your day 😊

Note:

  • Adjust spices according to taste
  • Paneer & coriander leaves optional
  • If you don’t have fresh cream you can use milk
  • Perserves upto 3 days in refrigerator ( airtight container )
