In India, On special occasion or party or on wedding day Biryani must include in the food list because it is a traditional dish following from many years. Biryani is famous in India with amazing taste, infused with aromatic Indian spices, combination of vegetables, whole Biryani spices & totally it’s flavourful long grain Biryani with Basmati Rice 🍚

Today, I’m sharing Vegetable Biryani with Soya Chunks. Soya Chunks are made from de-fatted soy flour that is processed into granules or chunks. It is rich in protein, vitamins and minerals. A vegetarian must include Soya Chunks atleast one time in a day or four to five times in a week. Soya Chunks also know as “Soya Mealmaker

Health benefits of Soya Chunks:

  • Soya Chunks contain 54.2 grams of protein, which exceeds the amount of protein found in meats, eggs, milk and wheat.
  • Soya protein contains all the amino acids needed by the body, and is an excellent replacement for meat-based proteins. Soya Chunks can be beneficial to the growth of strong bones and teeth in children.
  • Soya protein in general is rich in B vitamins, iron, calcium and Omega-3 fatty acids.

Ingredients:

1 cup = 160 gms

  • Basmati Rice – 1 1/2 cups – 240 gms – washed twice and strain water
  • Soya chunks – 1 cup
  • Cauli flower florets- 2 cups
  • Carrot – 1 – peeled off – diced
  • Fresh beans – 15 – 1 inch cut
  • Potatoes – 2 – medium sized –Β peeled off – diced
  • Onion – 1 – medium sized – slices
  • Curd – 1 1/2 cup – whisked
  • Ginger – garlic paste – 1/2 tb sp
  • Salt – 2 tsp
  • Red chilly powder – 1 1/2 tsp
  • Red chilly flakes – 1 1/2 tsp
  • Homemade Biryani Masala Powder – 3 tsp
  • Cloves – 2
  • Cinnamon sticks – small – 2
  • Cardamom – 3
  • Bay leaves πŸƒΒ – 3 small
  • Star Anise – 1
  • Mace (japatri) – 2 small pieces
  • Mint leaves – 1 cup – washed n chopped
  • Coriander leaves – 1 cup – washed and chopped
  • Butter – 4 tb sp or 1/4 cup – room temperature

Procedure:

Pre-Preparation:

  • Heat 2 cups of water over medium heat
  • When water started boiling add soya Chunks and cook for 3-5 mins or till they puff up fully
  • Turn off heat, strain water using colander
  • Squeeze water from soya Chunks and Keep aside
  • Soya chunks are ready to use in Biryani

Process of making Soya Chunks Vegetable Biryani :

  • Heat deep frying pan or frying pan over medium heat
  • Add butter, let it melt
  • Next add cloves, cinnamon sticks, cardamom, bay leaves, Star anise and mace. Saute and add all chopped vegetables ( cauliflower, Carrot, beans and potatoes)
  • Saute 3 minutes and add chopped onion & cooked Soya chunks
  • Mix well and stir 2 minutes
  • Next add salt, red chilly powder, red chilly flakes, Biryani Masala Powder, ginger-garlic paste & mix well
  • Saute 2 minutes and add chopped mint, cilantro leaves
  • Mix well and add curd, Stir and cover with lid
  • Cook 2 mins and add basmati rice
  • Gently mix and add 1 1/2 cups water
  • Once again, combine well and cover with lid
  • First cook 10 minutes over medium heat and simmer for next 15 minutes
  • Turn off heat and let it infuse the flavours in Biryani. Don’t open the lid for 10-12 minutes ( Make sure to keep it on coaster or kitchen towel, don’t keep on stove/ Cooktop because it might burnt at bottom)
  • Mean while, prepareΒ Cucumber Raita πŸ₯’Β πŸ˜‰

Note:

  • Adjust spices & salt according to taste
  • Will soon share, Homemade Biryani Masala Powder
  • If you doesn’t like to add curd, you can skip it and replace with tomatoes πŸ…
  • Actually 1 cup Basmati Rice needs 2 cups of water but in this recipe, I reduced water quantity because already added curd. If you’re not adding curd, make sure to add correct ratio of water in your Biryani.
  • I used Royal Basmati Rice Brand and it’s fluffy and well cooked long grain
  • If you’re cooking in Pressure cooker, cook for 1 whistle and simmer 10 minutes. Turn off heat
