Main Course: Rice variety| Kuska Biryani (Veg)

Kuska is a plain Biryani which is infused with Indian flavours and spices. This is a quick biryani you can make it for lunch or party time or at occasion, basically it’s plain right, so it goes well with any Indian gravy curry ๐ย or you can serve it withย Onion Salanย or mild sour and sweetย Cucumber ๐ฅ Raita.
Let’s start with Ingredients and follows Procedure
Ingredients:
- Basmati Rice – Long grain rice – 200 grams
- Onion – 1 medium – sliced
- Tomatoes – 2 medium – chopped
- Mint leaves – 20
- Coriander leaves – 1/2 cup – chopped
- Oil – 1 tb sp
- Ghee – 1 tb sp
- Red chilly powder – 1 tsp
- Salt – 1 1/2 tsp
- Garam Masala Powder – 1/2 tsp
- Cloves – 2
- Cinnamon – 2 small sticks
- Green Cardamom – 2
- Star anise – 2
- Bay leaves – 2
- Ginger-garlic Paste – 1/2 tb sp
- Green chillies paste – 1/2 tb sp
- Water – 400 ml
Procedure:
- Heat tawa over medium to high heat
- Add oil & ghee
- Add cloves, cinnamon, Cardamom, Bay leaves, green chillies paste and onion
- Saute 2 minutes and add ginger-garlic paste
- Mix well and add tomatoes
- Saute a minute and cover with lid and cook 3 minutes
- Next add salt, turmeric powder, red chilly powder and Garam masala powder.. Mix well
- Saute 1 minute and add water
- Cover with lid … let water boil
- Add rice, gently mix and close with lid
- Cook 12-15 mins
- Turn off heat and serve hot with any gravy curry

Note:
- Adjust spices according to taste
- If you’re in diet skip oil and use ghee
- I cooked Biryani in non-stick deep fry pan, if you wish to make in pressure cook, it’s yes you can do for one whistle ๐
- If you doesn’t like plain Biryani, you can add small amount of peas and carrot.. it’s completely optional

good share Ramya! This is a great combination with any gravy as you say. I sometimes make jeera pulav with cumin and pepper as the main ingredient and it goes well with any gravy.

I made your biryani last night and it turned out awesome! Only addition I made is adding 1 Japanese eggplant to the rice; Other than that I followed your instructions and the biryani was delicious ๐๐
