Street Food : Starter : Kolkata style Pani puri : Puchka 😍

Street food, most of the people like to have street food daily or weekly or once in a month because they are super 😋 yummy and mouth watering taste. In street food they are many different varieties of chaat/ Pani puri in different places all over India 🇮🇳

In India, they serve Pani puri, chat,Masala puri, Gobi Manchurian, fried pakoda, onion fritters, sweets, juices, etc., in street food for Evening snack

But Today I prepared a famous and relish street food special in Kolkata of course all over India that’s Pani Puri😋 It is tangy, spicy and tasty and you like to have one more plate again, it’s an endless treat

Such a delicious street food I like to prepare at home with family on weekends. You can prepare this at weekends/ small party at home/ get together/ Bday treat/ can have it for no reason 😉

I used Store bought puri’s, if you have so much time you can make them nicely at home else grab a prepared pack from store it’s easily available. Soon, I will post how to make puri’s for chaat/ Pani puri/ Masala puri

Let’s start with Ingredients and follows Procedure

Ingredients:

  • Puri’s – as required

Mint-Coriander paste:

  • Mint leaves – 1 cup – 30 -35 leaves
  • Coriander leaves – 1 cup – small bunch
  • Green chillies – 2
  • Ginger piece – 1 1/2 inch

Potato 🥔 Masala: Stuffing

  • Boiled potatoes – 4 – 500 gms( peeled off & mashed)
  • Onions – 1 medium- finely chopped
  • Black chickpeas/ kala Chana – 80 gms – boiled
  • Filtered paste( mint coriander) – 1/4 cup ( Explained in Procedure)
  • Chaat masala powder – 1 tsp
  • Aamchur powder – 1/2 tsp
  • Red chilly powder – 1/2 tsp
  • Cumin powder – 1/2 tsp
  • Red chilly flakes – 1/2 tsp
  • Salt – 1 1/2 tsp
  • Coriander powder – 1 tsp
  • Coriander leaves – chopped
  • Lemon juice – 1 tb sp( optional )

Pani / Masala Pani 😦 Pani means water )

  • Mint-Coriander water – 750 ml
  • Tamarind extract – 250 ml ( soak in hot water upto 20 mins)
  • Red chilly flakes – 1/2 tsp
  • Chaat Masala Powder – 1/2 tsp
  • Red chilly powder – 1/2 tsp
  • Aamchur powder – 1/2 tsp
  • Salt – 1/2 tb sp
  • Sugar – 1 tb sp
  • Cumin powder – 1 tsp
  • Coriander powder – 1 tsp
  • Onion – finely chopped – 2 tb sp
  • Coriander finely chopped- 3 tb sp

Toppings:

  • Finely chopped onion – 1/4 cup
  • Kala Chana – 1/4 cup
  • Coriander leaves – 1/2 cup

Procedure:

How to cook perfect Boiled Kala Chana?

  • Soak 80 gms of kala Chana in a bowl of water
  • Soak atleast 8-10 hrs
  • Add kala Chana in pressure cooker
  • Add 1 tsp salt and cook for 5 whistles
  • Let the pressure goes off
  • Open lid and strain water, take one Chana from it and press if it’s mashes easily and soft inside then it’s cooked well.. otherwise cook for more 2-3 whistles
  • Kala Chana cooked well & Keep aside
  • Boiled Kala Chana ready

Mint- Coriander paste:

  • Blend all mentioned mint coriander ingredients in a mixer grinder
  • Blend till smooth paste
  • Add 750 ml water in it and again whip it
  • Fliter the water in a large bowl
  • Keep water and filtered paste separately
  • Water (Pani) used in making Masala Pani and paste will be added in potato masala stuffing

Potato Masala stuffing:

  • In a deep bowl add mashed potatoes
  • All spices, salt, filtered paste, onion, kala Chana, lemon juice and coriander leaves
  • Mix well with hand and Keep it aside
  • Potato Stuffing ready

Making Masala Pani:

  • In a big bowl Add tamarind extract & mint coriander filtered water
  • Add spices, salt, red chilly flakes, sugar, onion, coriander leaves
  • Mix well

Assemble:

  • Puri’s
  • Masala pani
  • Potato Masala stuffing
  • Boiled & cooked Kala Chana
  • Toppings

Serving Pani puri / Puchka : 😍

  • Arrange puri’s in a serving plate
  • Gently press at center of each puri ( Hallow)
  • Add 1 tsp potato stuffing in each puri
  • Add toppings, onion, kala Chana and coriander
  • Now fill 1-2 tb sp Masala Pani in each puri and eat immediately 😋
  • Pani puri 👌👌👌

Note:

  • Adjust spices and salt according to taste
  • Masala Pani – Taste wise – Which I prepared is perfect either not spicy or mild
  • I’m out of black salt, if available add 1/2 tsp in Masala Pani
  • Serves 1 litre Masala Pani and around 60 puri’s
