South Indian Breakfast Recipe: Borugula Upma

Puffed rice Upma/ Borugula upma is a special breakfast in Rayalaseema region, Andhra Pradesh ๐Ÿ‡ฎ๐Ÿ‡ณ

It is a staple food and relishing freshly homemade breakfast is healthy, this breakfast recipe can called in other names such as Uggani/ Murmura Upma it varies between region but the process is same you can frequently find as a breakfast in restaurants/ street food in these regions Cuddapah, kurnool, Anantapur, chitoor districts in Andhra Pradesh state.

While serving it in these districts again varies, i throughly observed in kurnool it served withย Mirchi Bajji, tastes awesome you can tryout in this way and the variation in cuddapah district it’s served withย Spicy Roasted Chickpea Powder/ podi. Both are different in taste, I hope you could try and experience the taste of this lovely breakfast from south India ๐Ÿ‡ฎ๐Ÿ‡ณ

Let’s start with ingredients and follows Procedure

Ingredients:

  • Puffed Rice/ Murmura/ Borugullu – 200 gms
  • Onion – 1 medium – finely chopped
  • Tomato – 1 medium – finely chopped
  • Dessicated / Shredded coconut – 3 tb sp
  • Green chillies – 5 – sliced
  • Tamarind pulp – 1 lemon size – Soaked in water & Squeezed
  • Salt – 1 1/2 tsp
  • Cilantro – 1/3 cup – washed and chopped

For tempering:

  • Mustard seeds – 1 tsp
  • Cumin seeds – 1 tsp
  • Urad Dal – 1 tb sp
  • Chana dal – 1 tb sp
  • Curry leaves – 8-10 leaves
  • Oil – 1/4 cup – 60 ml

Procedure:

Pre-preparation:ย 

  • Wash Murmura/ Borugulu in large and wide bowl &ย soak them in fresh water ( repeat this step twice)
  • Next, check the puffed rice is soft & smooth by pressing it between two fingers.
  • If it is soft & smooth then squeeze water and take out Murmura/Borugulu in another bowl ( as shown in picture)
  • Now Murmura is ready to make for breakfast. This is the basic step

Process of making Borugula Upma:

  • Heat skillet pan/ deep fry pan over medium heat
  • Add oil and tempering.. Saute 1 mins
  • Next add green chillies and Onions
  • Saute 2 minutes or till they become translucent
  • Add turmeric powder, salt and tomatoes
  • Mix well and cover with lid
  • Cook 2 to 3 mins and add tamarind pulp, salt & desiccated coconut
  • Mix well and Murmura
  • Gradually mix and add chopped cilantro .. mix well and cover with lid
  • Reduce heat to low and cook 5 mins
  • Turn off heat and gently mix then serve this breakfast withย Pappulu Podi

Note:

  • Adjust spices and salt as per taste
  • To enjoy the taste, best to serve immediately
  • Murmura comes in two ways.. one is Normal Murmura and other one lightly salted Murmura (as shown in picture) I used salted variety

  • I added green chillies and desiccated coconut as is but you can also blend them together in mixer if you are using fresh coconut & it tastes great
