Side Dish: Vegetable Kurma

A special side dish goes well with roti/chapati/naan made out of coconut gravy, spices, and mixed vegetables. It tastes delicious and a must-try recipe, I have added carrots, beans, cauliflower, potato vegetables along with onion and tomato. This curry tastes a little sweet and flavourful with the blended spices. Easy to make and do try my recipes you will definitely enjoy the delicacy of Indian cuisine.

Let’s start with Ingredients and follows the procedure

Ingredients:

To make masala paste:

  • Cloves – 2
  • Cinnamon stick – 1 inch
  • Cashew nuts – 10
  • Poppy seeds – 1 tbsp
  • Desiccated Coconut – 1/2 cup
  • Water – 60 ml

To Cook vegetables:

  • Salt – 1/2 tsp
  • Water – 1 1/2 liters
  • Carrots – Chopped – 1
  • Beans – Chopped – 10
  • Cauliflower – Florets – 20
  • Frozen Green peas – 1/4 cup
  • Potato – Chopped – 1

Curry Ingredients:

  • Oil – 2 Tbsp
  • Cinnamon – 1 inch
  • Green cardamom – 1
  • Bay leaf – 1
  • Cumin seeds – 1/2 tsp
  • Fennel seeds – 1/2 tsp
  • Onion – 1 – finely chopped
  • Ginger- garlic paste – 1 teaspoon
  • Tomatoes – 2 – finely chopped
  • Red chilly powder – 1 tsp
  • Salt – 1/2 tsp
  • Turmeric powder – 1/2 tsp
  • Cumin powder – 1/2 tbsp
  • Coriander powder – 1 tbsp
  • Water – 60 ml

Procedure:

To make masala paste:

  • Take a mixie jar to add all masala paste ingredients in it, blend it and make a smooth paste
  • Keep it aside

To cook vegetables:

  • In a deep bowl, add water and salt
  • Bring it to a boil and add all vegetables mentioned above
  • Cook 10 mins
  • Strain the water and keep veggies aside

Curry Process:

  • Heat a deep frying pan on medium heat
  • Add oil, bay leaf, cinnamon stick and cardamom
  • Saute then add Cumin and fennel seeds
  • Saute a minute then add chopped onion
  • Saute, next add ginger garlic paste
  • Saute 2 mins then add chopped tomatoes
  • Saute till mushy and then add the grounded masala paste
  • Mix well and add water
  • Combine well and cook few mins then add veggies
  • Saute and cover with a lid. Cook 5 mins or till the gravy thickens
  • Turn off heat and curry is ready to serve
