Garbanzo Beans / Chickpeas salad

Fresh, healthy and protein packed salad! A delectable salad recipe to your tastebuds. It’s a best option at evening snack or as side in your breakfast or at lunch meal. A combination of freshly chopped veggies and beans tossed in salt , pepper and more.

Easy to pack in your kids lunch box and great way to indulge protein for everyone at home in a tasty way, it’s purely vegan recipe. I haven’t added cheese or curd for creamy consistency you can include if you wish for it. Try to use grated Parmesan cheese or paneer or tofu if you’re vegan 🌱. Duration: 12 hours ( soaking time ) + 30 minutes  ( cooking time ) + 10 minutes ( preparation time) 

Let’s start with Ingredients and follows Procedure


  • Cooked Garbanzo Beans – 1 bowl ( if you wish, you can use canned chickpeas )
  • Cucumber – 1 – finely chopped
  • White onion – 1/4 cup – finely chopped
  • Red bell pepper – 1/4 cup – finely chopped
  • Carrot – 1/2 cup – grated
  • Coriander leaves – chopped
  • Lemon juice – 1 Tb sp
  • Salt – 1/2 teaspoon
  • Black Pepper Powder – 1/2 teaspoon
  • Dried basil – 1/4 teaspoon


  • Firstly, wash & Soak 160 grams of Garbanzo Beans/ channa in a wide bowl for 10-12 hours. Next add in pressure cooker with 1 teaspoon salt and cook them for 3 whistles. Turn off heat and strain water & keep aside
  • Take a mixing bowl, add in cooked beans, cucumber, carrots, onion, bell pepper, cilantro, salt, pepper powder, lemon juice and dried basil 🌿. Combine well and serve
  • You can add this salad in a 🌮 taco or fill in roti or add in Mexican or Buddha bowl 🍲 . It fulfills the meal and a best way to include protein in your diet.
