Instant Breakfast: Vegetable Pancakes

Vegetable Pancakes are easy to make, today I have prepared new version of pancakes, itβs healthier, vegan and Eggless. These pancakes can made instantly, turned out yummy and delicious π
I have added few different vegetables in pancake, you can include any combination of vegetables to make this pancake, such as cabbage, sweet potato, mushroom etc., Do try this healthy breakfast at home and enjoy your meal π
Letβs start with Ingredients and follows Procedure
Ingredients:
- Wheat Flour – 1/4 cup – 60 grams
- Rice flour – 3/4 cup – 120 grams
- Cumin seeds – 1 teaspoon
- White sesame seeds – 1 teaspoon
- Salt – 1/2 teaspoon
- Green chillies – 2 – finely chopped
- Carrot – peeled off – 1 small – julienne cut
- Salad Cucumber – 1/2 – julienne cut
- Red radish – 3 – julienne cut
- White onion – 1 small – sliced thinly
- Spring onion greens – chopped
- Coconut oil – 5 teaspoons – to cook pancake both sides
- Water – 120 ml
Procedure:
- First chop all vegetables as per instructed
- Next add vegetables, flours, cumin, sesame , salt and green chilles in a wide mixing bowl
- Combine all ingredients , make sure flour coated well on the veggies
- Then add 120 ml water and mix them again, you will get a thinly coated batter on veggies
- Now heat up a pan on medium to high heat then smear oil with kitchen tissue on it
- Next spread a ladle full of batter on pan and add 1/2 teaspoon oil and cook both sides till you find golden spots and also you can see the crispy texture
- Now it’s time for plating, serve with yogurt or curd or pickle or chutney
- Repeat the same process to prepare other pancakes.
