Tri-color Quinoa Pulao| Healthy Lunch| One pot cooking

Pulao recipe: Quinoa/ Tri-color quinoa Pulao

A pack of nutrients, multiple B vitamins, high in protein and fiber contents are present in “Quinoa” . It is a kind of seed mostly cultivated in European, North American and other countries.

There are many types of quinoa varieties are available in market or stores but easily you can find red quinoa, black quinoa and regular/white quinoa. They are different in color, taste and texture. So I bought a pack of tri-color quinoa to make more healthy and delicious recipes with quinoa.

Today, I prepared mixed/ tri-color quinoa Pulao is a rich Indian dish usually made with rice so I tried with quinoa to make healthier recipe including Indian spices and more vegetables to enhance the taste of quinoa pulao.

Let’s start with Ingredients and Procedure


  • Mixed quinoa/ tri-color quinoa – 120 grams
  • Ghee / clarified butter – 1 Tb sp
  • Clove – 1
  • Cinnamon stick – small piece – 1
  • Bay leaf – 1
  • Cumin seeds – 1 teaspoon
  • Green chillies – slit – 2
  • White Onion – sliced – 1 bowl
  • Carrot – Peeled off and chopped
  • Beans – chopped
  • Potato – Peeled off and Diced
  • Frozen green peas – 1/4 cup
  • Mint leaves – 20 – chopped
  • Salt – 1 teaspoon
  • Red chilly powder – 1/4 teaspoon
  • Garam masala powder – 1/2 teaspoon
  • Crushed black pepper corns – 1/4 teaspoon
  • Water – 360 ml ( To cook Pulao )

Health Benefits of quinoa:

  • Very Nutritious and Contains the Plant Compounds Quercetin and Kaempferol
  • Very High in Fiber, Much Higher Than The Other Grains
  • It gives high protein, Iron , Magnesium, B vitamins and more dietary fibers
  • Gluten-Free and Perfect for People With Gluten Intolerance
  • Has a Low Glycemic Index, Which is Good for Blood Sugar Control.
  • Might help to lose weight


  • Heat a pressure cooker on medium
  • Add ghee, cumin seeds, clove, cinnamon stick, bay leaf and green chillies
  • Saute 30 secs and then add chopped onion and ginger garlic paste
  • Saute 2 minutes and add chopped veggies ( potato, carrot and beans)
  • Saute 2 more minutes and then add green peas, chopped mint leaves and spices (salt, red chilly powder, crushed pepper corns, Garam masala powder )
  • Mix well and sauté 2 more minutes. Then add water and stir
  • Close the cooker and let it cook for 2 whistles
  • Turn off heat and let the pressure release or leave 10 minutes aside
  • Open pressure cooker, Pulao cooked well then gently mix and serve hot with Cucumber 🥒 Raita
  • Enjoy this healthy and yummy meal, have a good day 🙂
