Vankaya Bajji Kura πŸ˜‹|Brinjal and Tomato πŸ… Curry | Side Dish

Side Dish: Vankaya Bajji KuraΒ

Amazing and traditional recipe which can make in less than half an hour. Vankaya Bajji Kura is super simple, tastes great and wonderful combination of these two vegetables are Brinjal and tomato πŸ…. This is an old version of Brinjal curry as a side dish but all we know β€œold is gold” πŸ™‚ right. One of the best curries I recommend for the people who are very busy in their daily lives or Β people who are eager to make curries in minutes or people who are lazy like me ☺️ ( I do some other works too ). So this is the choice for them, as we all know Brinjal plays a vital role in South Indian people’s life as curry, Bajji, Kura or gravy curry.

Let’s start with Ingredients and follows Procedure

Ingredients:

  • Brinjals – 8 – medium sized – diced
  • Onion – 1 medium sized- diced
  • Tomatoes – 2 small- diced
  • Green chillies – 5
  • Salt – 1 tsp
  • Turmeric Powder Β – 1/4 tsp
  • Coriander leaves – 1 cup – finely chopped
  • Tamarind extract – 2 Tb sp
  • Water – 160 ml
  • Coconut Oil – 1/2 Tb sp ( u can use any cooking oil)
  • Mustard seeds – 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • Urad dal – 1 tsp
  • Chana dal – 1 tsp
  • Curry leaves – 6 – chopped

Procedure:

  • In a sauce pan, add oil, mustard seeds, cumin seeds, urad dal, Chana dal and curry leaves over medium heat
  • Saute till they light brown in color, follows green chillies, onion, tomato, Brinjal, salt, turmeric powder and water
  • Combine everything and cover with lid
  • Cook for 20 minutes and give it a stir
  • Add coriander leaves and turn off heat
  • Make sure each vegetable cooked well and gently mash (don’t make purΓ©e or paste, keep Chunks of Brinjal it tastes great)
  • Vankaya Bajji Kura ready, Enjoy 😊
