How many of you like Quinoa? Frankly saying, I donโt like to have quinoa but itโs health benefits are wonderful. Quinoa contains protein, fiber higher than the other grains and lots of minerals and vitamins. So I started including quinoa in my meal not as main course but I found different ways to add quinoa in recipes then the output is my todayโs dish ๐ Spinach Quinoa Vegetable Soup ๐ฒ
The soup become so yummy packed with all nutrients from vegetables, quinoa and spinach. Itโs so refreshing and Iโm sure it makes your tummy full and easily you can skip eating snacks at brunch time or evening if you had soup at afternoon โบ๏ธ
Health benefits of quinoa:
- Protein,ย Fiber,ย Manganese,ย Magnesium,ย Phosphorus,ย Folate,ย Copper,ย Iron,ย Zinc,ย Potassium
- Vitamins B1, B2 and B6
- Small amounts of calcium, B3 (niacin)
- Gluten free
- Very high in antioxidants
- Might help to lose weight ๐ฎ
Ingredients:
- Quinoa – 40 gms – Cooked
- Butter – 1 tsp
- Cumin seeds – 1 tsp
- Sesame seeds – White – 1 tsp
- Bay leaf – 1
- Ginger-Garlic Paste – 1 tsp
- Onion – 1/2 – finely chopped
- Tomato – 1 – finely chopped
- Carrot – 1 – diced
- Cabbage – 1/4 cup – sliced
- Broccoli florets – 6
- Cauliflower florets – 6
- Green peas – 2 Tb sp
- Yellow carrot – sliced – 1/4 cup
- Spinach – Handful – Chopped
- Turmeric Powder – 1/4 tsp
- Salt – 1/2 Tb sp
- Black Pepper Powder – 1 tsp
- Lemon juice – 1 Tb sp
- Cilantro – 2 Tb sp – chopped
- Water – 500 ml ( to make soup )
Procedure:
Cooking Quinoa:
- In a pressure cooker add washed quinoa along with water 120 ml ( soak 10 minutes)
- Cook for 3 whistles and open lid when pressure goes down
- Takeout in a bowl and keep aside
Process of making Spinach Quinoa Vegetable Soup:
- Add butter in a heavy bottomed pan over medium heat
- Add in cumin, sesame seeds, bay leaf, sautรฉ 30 secs and next goes in ginger garlic paste and onions
- Saute 2 minutes and add tomato
- Saute till it becomes mushy and add all chopped vegetables
- Mix well and cover with lid, let them cook for 3 minutes
- Next goes in salt, pepper and turmeric powder – Stir again , add cooked quinoa and mix well
- Then Add Spinach, Saute again along with water
- Again cover with lid and cook 10 minutes
- Combine well and turn off heat
- Finally Add chopped cilantro and lemon juice
- Make sure everything combined well
- Spinach quinoa vegetable soup is ready to serve
- Serve hot and enjoy winter โ๏ธ

Note:
- You can use rice or lentils instead of quinoa
- Adjust spices according to taste
- I used butter to sautรฉ veggies you can also make with oil
- Vegetable broth can be replaced with regular water ๐ฆ
