Side dish / Evening snack : Vegetable Stir FryΒ

Duration: ~15 minutesΒ 

Crunchy yet tasty vegetable stir fry can make in less than 20 mins, it’s so easy and filled with aromatic flavours of indian spices. This facile authentic food to be served hot to enjoy the taste and crispness of vegetables, as I have used carrot, beans , Capsicum, potatoes πŸ₯”Β you can add any vegetable as you wish. You might also include cabbage, broccoliπŸ₯¦, chestnuts 🌰 and asparagus too πŸ˜‹

I hope you could make this simple dish in pot luck or as evening snack or at kids party 🎊

Ingredients:

  • Potatoes – 4 – diced
  • Carrot πŸ₯•Β – 1 – peel off and cut 1/2 inch
  • Beans – 15 – Cut one inch
  • Green Capsicum – 1/2 – slices
  • Red Capsicum – 1/2 – slices
  • Salt – 1/2 tsp
  • Red paprika – 1 tsp
  • Hakka Masala Powder – 1/2 Tb sp
  • Dry mango powder – 1/2 tsp
  • Butter – 2 Tb sp
  • Oilve oil Β – 1 tsp
  • Spring onions – 2 Tb sp – Chopped – GarnishΒ 

Procedure:

  • Heat wok over medium heat then add butter & oil
  • First add potatoes πŸ₯”, sautΓ© them upto 5 mins or till they start changing light brown color
  • Next add chopped carrot and beans, keep stirring for about 2 minutes
  • Then Add green & red Capsicum sautΓ© them for 2 mins and finally add salt, paprika, dry mango powder and hakka masala powder
  • Mix well and toss veggies over high heat and turn off
  • Garnish with spring onions and combine well, serve hot and enjoy your day πŸ™‚

Note:

  • Adjust spices and salt according to your preference
  • You can use any vegetable as you wish
  • I used Indian spices, you can make with schezwan sauce or pepper and salt as you like to have them
  • Hakka Masala Powder is a readymade mix available in any Indian store, you can easily grab a pack 😊 . This powder can also used in noodles 🍝
