Side Dish: Potato Talimpu

A simple and traditional recipe from South Indian cuisine, India 🇮🇳 Can make in 10 minutes. It is boiled potato stir fry which is delicious, soft and infused with spices. In this side dish, used less oil and combine with boiled potatoes contains more nutrients than fried potatoes 🥔. Do try this easy recipe and enjoy with piping hot steamed rice and dal or lentils curry. Dal recipe links shared at the end of this post.

Let’s start with Ingredients and follows Procedure

Ingredients:

  • Potatoes – 3 – medium sized- Boiled – Peeled off – Diced
  • White onion – 1 small – finely chopped
  • Red chilly powder – 1/2 tsp
  • Rasam powder – 3/4 tsp
  • Salt – 3/4 tsp
  • Turmeric Powder – 1/4 tsp
  • Oil – 2 tsp
  • Mustard seeds – 1/4 tsp
  • Cumin seeds – 1/2 tsp
  • Chana dal / Bengal gram – 1 tsp
  • Urad dal – 1 tsp
  • Curry leaves – 5 – chopped

Procedure:

Steamed potatoes :

  • Wash potatoes under running water, chopped into two equal parts
  • Add in plate along with pinch of salt & turmeric powder
  • I kept potatoes plate on top of rice cooking vessel, so that both cooks well
  • When they’re done, turn off heat and let them become cool and peel off & chop them

Boiled potatoes:

  • In a mixing bowl add 1 liter water along with salt & turmeric powder
  • Mix well, bring it to boil and add chopped potatoes 🥔 ( two halves )
  • Cover with lid and let them cook for 10 mins or till they’re firm
  • Turn off heat and take out cooked potatoes. Let them become cool
  • Peel off & chop them
  • Steamed potatoes are ready to use in curry

Process of making potato 🥔 stir fry/ Boiled potatoes 🥔 stir fry :

  • Heat skillet pan over medium heat
  • Add oil, mustard seeds, cumin seeds, urad dal, Chana dal, curry. Saute a minute or till they splutter
  • Then Add chopped onion, Saute 2 minutes
  • Next Add salt, red chilly powder, Rasam Powder, turmeric powder & mix well
  • After a minute or so add chopped cooked potatoes
  • Toss them and gently mix till they absorb the flavors or sauté slightly for 5 minutes
  • Turn off heat and take out in a serving bowl
  • Enjoy potato stir fry with dal rice or steamed rice

    Nice recipe ramya.. It’s a perfect curry for lunchboxes, on hurry mornings. I usually pressure cook both the rice & potatoes..which saves a lot of time. Later stir fry the potatoes 😃.
