As I’m curious to prepare a recipe should be something new in taste, in looks, gives you pungent flavor in rice, so I prepared this quick lunch box recipe by using my favorite Tri color Capsicum and corn with new twisted spices andΒ infused with flavored garlic added perfect aroma to the dish. It is a blockbuster recipe at home 😍 I’m on cloud nine to share this tasty lunch box recipe and I can take next step to explore more new variety dishes.

Today I prepared a flavored rice with the combination of whole spices, Tri color Capsicum and sweet corn kernels Β and more add ons πŸ™‚

Duration: 40 mins

I hope you could try and enjoy the dish. Let’s start with Ingredients and Procedure

Ingredients:

  • Basmati Rice – Cooked – 1 cup (240 gms)
  • Capsicum ( Yellow, Orange & Red ) – Β 1 cup (each ) – Diced
  • Sweet corn kernels – 1 cup
  • Onion – 1 medium sized – sliced
  • Kashmiri red chillies(5), 1 Small cinnamon stick , Star anise ( half piece) – Soak in hot water
  • Butter – 4 Tb sp
  • Garlic cloves – Peeled off – Finely chopped
  • Cashew Nuts – 10 pieces
  • Cumin seeds – 1/2 tsp
  • Red chilly powder – 1 tsp
  • Turmeric Powder – 1/4 tsp
  • Garam Masala Powder – 1/2 tsp
  • Cloves – 2
  • Cinnamon stick – 1/2 inch
  • Cardamom – 2
  • Bay leaves – 2 – dried
  • Fresh bay leaf – 1
  • Star anise – 1
  • Curd – 80 ml
  • Salt – 1 1/2 tsp
  • Oil – Few drops
  • Kasuri Methi / Dried fenugreek leaves – powdered- 1 tsp
  • Spring Onions – Garnish

Procedure:

Pre-preparation:

Red chilly Paste:

  • In a bowl add Kashmiri dry Red chillies , cinnamon stick and half star anise
  • Add half cup of hot water (120 ml )
  • Soak 15 minutes
  • Let it become cool & blend altogether in mixer grinder
  • Make smooth paste & keep aside

Cooking Basmati Rice:

  • In a large bowl add one liter water along with 2 cloves, 2 cardamom, 2 bay leaves, 1 Star anise, small cinnamon stick
  • Mix well & let it boil. Meanwhile wash Basmati rice twice & keep aside
  • When water started boiling add washed basmati rice & few drops oil
  • Cover with lid and cook rice
  • After 5 mins, cover the lid half of the bowl
  • Let pressure goes out & cook over medium heat
  • When rice cooked upto 70% then turn off heat
  • Strain water in colander
  • Let the rice become cool
  • Basmati rice is ready
  • While adding Basmati rice in corn Capsicum masala remove all added whole Garam masala spices (cinnamon, cloves, bay leaves etc.,)

Process of making Corn Capsicum Rice / Tri color Capsicum Rice:

  • Heat deep frying pan or skillet pan over medium heat
  • Add butter, Cumin seeds, bay leaf, cashew nuts and chopped garlic cloves
  • Fry till garlic changes to brown color
  • Next add red chilly paste and saute 2 minutes
  • Then add chopped onion and sautΓ© 2 minutes
  • After that add chopped tri color capsicum and sweet corn, mix well
  • Saute 2 more minutes
  • Add in turmeric powder, red chilly powder, Garam masala powder, salt & combine well
  • Then add curd & Mix well
  • Cook 2 more minutes and add cooked Basmati rice
  • Gently Mix, cover with lid and cook 10 minutes on low heat
  • Next add kasuri methi Powder, Mix well and cook more 5 minutes ( by covering with lid)
  • Turn off heat and garnish with spring onion greens
  • Serve hot & Enjoy your meal
