Vegetable Pulao: Lunch RecipeΒ

Mainly, Pulao is mild spicy in taste & very delicious dish in India which can have either in lunch/ dinner and you can make this Pulao in less time… it is a quick lunch box or make on festivals

Pulao is a main dish usually prepared with rice and contains spices, vegetables, onion depending on cuisine. It can be prepared either with normal rice or basmati rice.

Mixed vegetable Pulao is healthy, aromatic flavor with whole spices, do try & enjoy your meal

Let’s start with Ingredients and follows Procedure

Ingredients:

1 cup = 160 gms

  • Basmati Rice – 2 cups – 320 gms
  • Water – 3 1/2 cups
  • Carrot – 1 – 2 inch cut
  • Beans – 15 – 2 inch cut
  • Potatoes – 3 – diced
  • Cauliflower florets – 20
  • Green peas – 1/4 cup
  • Bay leaves – 2
  • Cloves – 3
  • Cinnamon sticks – 2
  • Cardamom – green – 2
  • Star anise – 1
  • Mace – 1 piece
  • Onion – 1 medium sized – Slices
  • Salt – 2 tsp
  • Cashew Nuts – 10
  • Ginger- Garlic Paste – 2 tsp
  • Cumin seeds – 1/2 Tb sp
  • Pepper corns – 10
  • Green chillies – 6 – slices
  • Butter – 1/4 cup – 4 Tb sp

Procedure:

  • Heat deep frying pan or heavy bottom pan over medium heat
  • Add butter, cloves, cardamom, cinnamon sticks, bay leaves, star anise, mace, bay leaves, cumin seeds & green chillies
  • Saute & Add Onions
  • Saute 2 minutes & Add Cashew Nuts, ginger- garlic paste. Mix well
  • Β Next Add vegetables, peas and pepper corns
  • Saute 5 mins and add water & salt. Mix well
  • Wash rice & strain water
  • When water started boiling add basmati rice & gently mix
  • Close with lid & cook 5 minutes over medium heat
  • Next reduce flame / simmer & cook 10 minutes
  • Turn off heat & let it set more 10 mins
  • Rice cooked well Open lid & gently mix
  • Vegetable Pulao is ready , Β Serve hot with any raita πŸ˜‹
