One of the most famous recipe from Kanchipuram, south India ๐ฎ๐ณย These idli’s are so soft and infused with Pepper and Asafoetida flavours. All you need to do make Idly Batter ahead & handy ingredients at kitchen shelves.. This idly can serve with any kind of chutney’s and Podi..
Today I prepared kanchipuram Idly and served with
Let’s start with Ingredients and follows with Procedure
Ingredients:
- Idly Batterย – As required – I used 600 ml
- Mustard seeds – 1/2 tsp
- Cumin seeds – 1 tsp
- Chana Dal/ Bengal gram – 1/2 tb sp
- Urad dal – 1/2 tb sp
- Curry leaves – 12 – chopped
- Green chillies – 1 – finely chopped
- Cashew nuts – 14 pieces
- Black pepper powder – coarse – 1/2 tsp
- Hing/ Asafoetida – 1/4 tsp
- Oil – 1 tb sp – any cooking oil
Procedure:
- Heat tempering pan over medium heat
- Add oil, mustard seeds, cumin seeds. Let them splutter
- Next add urad dal, Chana Dal, curry leaves, green chillies & cashew nuts, Saute
- Add Pepper powder & hing when they’re turning to golden brown
- Saute & turn off heat
- Transfer this mixture in Idly batter
- Combine well and fill batter in Idly mold (as shown in picture)
- Steam for 10 mins in Idly cooker
- Turn off heat let it set 5 mins and open lid
- Idli’s cooked well, now it’s time to serve
- Enjoy kanchipuram Idly with your lovely combination ๐
