Homemade Avakaya ๐Ÿ˜ƒ| Mango pickle with mustard powder ๐Ÿ˜‹ |Side Dish | Summer Special โ˜€๏ธ

Mango Pickle is a most popular South Asian Pickle and traditional recipe in Andhra Pradesh, South India ๐Ÿ‡ฎ๐Ÿ‡ณ. It is the king of all pickles especially when we made it with roasted mustard seeds powder, it has pungent aroma of mustard powder and when it mixed up with red chilly powder , salt, mango pieces and fenugreek seeds powder๐Ÿ˜‹ aww! While explaining about this pickle my mouth watering ๐Ÿ˜‰

If you want to taste you need to wait for 3 days, let Pickle soak all the flavours of spices, tempering and mustard seeds powder. After 3 days, just open & mix well.. now, it’s time to taste ๐Ÿ™‚ย I can’t explain more it tastes awesome ๐Ÿ‘Œ๐Ÿ‘Œ๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณ

Side dish : Mango Pickle | Andhra cuisineย 

Quantity: approx ~ 1 kilograms

ย Duration: 20 mins

Let’s start with ingredients and follows Procedure

Ingredients:

  • Raw mangoes – 3 – diced – 800 gms
  • Red chilly powder – 60 gms
  • Salt – 60 gms
  • Sunflower Oil – 80 ml
  • Dry Roasted Mustard seeds – 1 tb sp
  • Dry Roasted Fenugreek seeds – 1 tb sp

For tempering:

  • Brown chickpeas/ kala Chana ย – 1 tb sp
  • Garlic cloves – crushed – 4 to 5
  • Mustard seeds – 1 tsp
  • Oil – 1 tb sp

Procedure:

Pre-preparation:

Dry roasted Seeds:

  • Heat skillet pan over medium heat
  • Dry roasted mustard seeds & fenugreek seeds separately
  • Keep them aside and let them cool down
  • Add them in blender till smooth powder
  • Keep it aside

Mangoes:

  • Wash mangoes and wipe off wet with paper towel or kitchen towel.. for pickle you need clean & dry mangoes
  • Chop sides of mangoes and discard seed ( center part of Mango) and cut into pieces
  • Diced mangoes are ready for pickle, Keep aside

Tempering for Pickle:

  • Heat tempering pan over low to medium heat
  • Add oil, mustard seeds & brown chickpeas
  • let them splutter and add garlic cloves
  • Saute & turn off heat when garlic cloves turns lite golden brown
  • Keep it aside and let it become cool

Process of making Mango Pickle:

  • Take a mixing bowl
  • Add diced mangoes, salt, red chilly powder, mustard seeds and fenugreek seeds powder
  • Mix well, add tempering and oil
  • Mix well and fill in an airtight container
  • Keep it aside upto 3 days and let it soak all the flavours
  • After 3 days open it , gently mix and Store in any pickle container or Jaadi
  • You can preserve upto one year ๐Ÿ˜Š๐Ÿ‘

Note:

  • To enhance the taste of the pickle use sesame oil instead of sunflower oil
  • I used Store bought red chilly powder, you can also use homemade red chilly powder
