Today, I’m sharing Avacado salad with homemade mint dressing. It is so easy and quick to make salad, you can prepare anytime at home but I prefer to have Salad either at morning/ evening β˜€οΈ

In this salad, I added ripped Avacado, Cucumber, yellow Β zucchini , freshly grated carrot and chopped cilantro and finally topped with mint dressing πŸƒ. Salad is so refreshing, healthy, clean & clear salad

Mint dressing is so flavored and pure aroma of freshly blended mint-ginger-garlic with spices, it turned out so creamy in texture and delicious too. I hope you like it

Let’s start with ingredients and follows Procedure

Ingredients:

  • Avacado – Ripped – 1 – chopped
  • Carrot – 1/2 – grated
  • Yellow zucchini – diced – peeled off
  • Cucumber – 2 mini – peeled off – diced
  • White onion – 2 tb sp – chopped
  • Cilantro – 1/4 cup

Mint Dressing:

  • Mint leaves – 30
  • Cashew nuts – 4
  • Almonds – 4
  • Salt – Β 1 tsp
  • Cumin powder – 1 tsp
  • Black Pepper powder Β – 1 tsp
  • Olive oil – 1/2 tsp
  • Ginger – 6 pieces – small
  • Garlic cloves – 2 peeled off & chopped
  • Honey – 1 tb sp
  • Lemon juice – 1 1/2 tb sp
  • Water – 80 ml

Procedure:

  • Add all chopped veggies in a mixing bowl
  • Next add all mint dressing ingredients in blender
  • Blend it into fine paste
  • Add this paste in mixing bowl & mix well
  • Salad is ready to serve

Note:

  • Adjust salt & lemon juice Β according to taste
  • You can skip ginger or garlic in dressing
  • Veggies you can add as per your choice
  • Instead of white onion, you can also add red onion
