Side Dish: Turnip Greens Stir Fry

Easy, healthy and more nutrition benefits available in turnip Greens. It’s very simple to prepare and goes well with steamed rice/Β Chapathi/ Roti

I sprinkled it with homemade masala powder which suits to any leafy vegetables curry or shallow fried vegetables, added this to give more richness to my turnip dish and Β make sure to protect nutrients from it.. ( try to not over cook leafy vegetables )

Let’s start with Ingredients and follows Procedure

Ingredients:

  • Turnip Greens – 1 Bunch
  • Β White onion – chopped
  • Oil – 2 tb sp

For tempering:

  • Mustard seeds – 1/2 tsp
  • Cumin seeds – 1 tsp
  • Urad Dal – 1 tb sp
  • Bengal gram – 1 tsp
  • Curry leaves – 5

Masala powder:

  • Roasted split Bengal gram – 80 gms
  • Coriander seeds – 1 tb sp
  • Cumin seeds – 1/2 tb sp
  • Sesame seeds – 1 tsp
  • Dry coconut powder / desiccated coconut – 2 tb sp
  • Curry leaves – 7
  • Tamarind extract – 1 tsp
  • Salt – 1 tsp
  • Red chilly powder – 1 tsp
  • Red chilly flakes – 1 tb sp

Procedure:

Masala Powder:

  • Dry roast coriander seeds, cumin seeds, garlic, curry leaves, tamarind in a skillet pan over medium heat
  • Saute & add sesame seeds, dry coconut powder and roasted split Bengal gram when they started turning into brown color
  • Roast them till golden brown and turn off heat
  • Transfer them in a plate & let them become cool
  • Add in mixer and blend till smooth powder
  • Keep it aside

Making Turnip Greens Stir Fry:

  • Heat skillet pan over medium heat
  • Add oil & tempering
  • Saute and add chopped onions
  • Saute 5 mins
  • Add chopped turnip leaves
  • Saute 5 mins and add blended powder
  • Mix well & cook 2 mins
  • Serve with hot rice and clarified ghee / Dal / Roti

Note:

  • Adjust spices according to taste
  • If you couldn’t make it, you can choose your own choice of leafy vegetables and follow the same process and masala powder
