Side Dish: Gongura PachadiΒ

Gongura Leaves πŸƒΒ are most popular in Andhra Pradesh, they’re many food varieties can prepared with Gongura but most famous is pickled gongura πŸ˜‹ Particularly in Telugu cuisine it’s a must in their day to day meal.

Gongura has a tangy essence and it’s queen of all leafy vegetables in Andhra πŸ™‚ People who tasted Gongura dishes such as pickles, Pachadi , Biryani, etc., will definitely agree with me πŸ‘

It cultivated all over India and in two varieties

  • Red stemmed Gongura
  • Green Stemmed Gongura

I used red stemmed Gongura which has more sourness than green stemmed it has pungent aroma, one who doesn’t tried any dish with Gongura could easily make it and enjoy the andhra flavours πŸ˜‹

Today I prepared Gongura Pachadi which is simple to make and tastes great, I hope you like it

Ingredients:

  • Gongura Leaves – 2 bunches
  • Dry roasted peanuts – 1/2 cup – 120 gms
  • Green chillies – 8 – chopped
  • Onion – 1 medium sized – diced
  • Salt – 2 tsp
  • Oil – 1/2 tb sp

Procedure:

  • Heat skillet pan Add oil, green chillies and onions
  • Saute till nice and tender
  • Take out in a plate
  • Next add washed and strained gongura leaves
  • Saute 2 mins ( till leaves become soft )
  • Take out in a plate
  • Let them become cool
  • Next add fried ingredients, peanuts and salt in mixer grinder
  • Blend coarsely ( add 250 ml water to blend properly)
  • Take out grounded chutney in a serving bowl
  • Gongura Pachadi ready to serve πŸƒ
  • Happy Cooking & Enjoy your day πŸ˜ƒ

Note:

  • Adjust spices according to taste
  • I haven’t added tamarind extract because gongura leaves contains sourness. If you would like to have you can add tamarind extract
  • If you’re preserving in refrigerator, Store it in Airtight container to remain fresh

  1. gongura is an extremely healthy ingredient and one should try and consume it more often. Such chutney / pachadi options ensure they are consumed with all 3 meals happily. Great share
