Coming to recipe, today I prepared my lovely evening snack it’s Mirchi Bajji & Cut Mirchi πŸ˜‹ I love these Bajji’s a lot like to have them when they’re hot, it’s perfect winter treat ❄ I enhanced the taste of Bajji toppings with onion, Β Masala powder and lemon juice. I hope you definitely enjoy it

Let’s start with Ingredients and follows Procedure

Ingredients:

  • Long – wide Mirchi / Green Chillies – Chopped ( as shown in picture )

Batter:

  • Bengal gram flour – 520 gms
  • Salt – 1/2 tsp
  • Ajwain / carom seeds – 1/2 tsp
  • Turmeric powder – 1/4 tsp
  • Baking soda – 1/4 tsp

Carom powder for stuffing:

  • Carom seeds – 1 1/2 tsp
  • Salt – 1/2 tsp
  • Cumin powder – 1/2 tb sp

Toppings:

  • Finely chopped white onion – 1/4 cup – 60 gms
  • Red chilly powder – 1 tsp
  • Garam Masala Powder – 1/2 tsp
  • Salt – 1/2 tsp
  • Cilantro – chopped – 1/4 cup
  • Lemon juice – 2 tb sp

Procedure:

Batter:

  • In a bowl Add all batter ingredients
  • Mix well
  • Add water little by little and make medium thickness of batter consistency

Stuffing: Carom seeds Powder

  • Add all mentioned ingredients in coffee blender or mixer grinder ( Carom seeds, salt & cumin powder )
  • Blend till smooth powder

Mirchi / Green chillies:

  • Wash chillies twice and clean the excess water with kitchen towel
  • Chop each into half ( Vertically) from top to bottom and again cut them into half ( horizontally)
  • Fill each chilly with carom powder
  • Keep them aside

Process of making Mirchi Bajji:

  • Heat oil to deep fry on medium heat
  • Now all set to make Bajji’s
  • Dip each green chilly in batter, make sure it covered completely with batter
  • Slowly drop each chilly in oil ( I added 3 Mirchi Bajji in one batch )
  • Fry both sides till golden brown color
  • Take out them on paper towel.. serve hot
  • Mirchi Bajji ready πŸ˜‹

Cut Mirchi:

  • Chop the fried Mirchi Bajji into 1/2 inch
  • Again fry them in oil till they turn out crisp and golden color
  • Take out them on paper towel
  • Arrange them in a plate
  • Add toppings and lemon juice
  • Mix well and serve hot πŸ™‚
  • Enjoy Cut Mirchi Bajji and have a good day

Note:

  • Adjust spices according to taste
  • Instead of red chilly powder you can also use Red Paprika
  • Green chillies I used are zero spice, I chose them to make Bajji. So make sure to use Green chillies aren’t spice for Bajji..
