Vankaya Bajji (2 ways) | Brinjal Fries | Snack | Winter Treat ❄️

If any one of you missed my snack recipes for tea time / evening snack so don’t get disappointed 😉 I’m sharing Few snacks recipes links shared below:

Coming to recipe, today I prepared my lovely evening snack it’s Vankaya Bajji / Brinjal fries I love these Bajji’s a lot like to have them when they’re hot, it’s perfect winter treat ❄️ I enhanced the taste of Bajji stuffing with onion, grated carrot, Masala powder and lemon juice. I hope you definitely enjoy it

Let’s start with Ingredients and follows Procedure

Ingredients:

  • Brinjals/ Egg plants – 10 – small ( X – cut )

Batter:

  • Bengal gram flour – 240 gms
  • Rice flour – 80 gms
  • Salt – 1/2 tsp
  • Ajwain / carom seeds – 1/2 tsp
  • Turmeric powder – 1/4 tsp
  • Baking soda – 1/4 tsp

Red chilly onion chutney: ( Stuffing )

Onion and Masala stuffing:

  • Onion – 1 – medium – finely chopped
  • Carrot – 1/2 – grated
  • Cilantro / Coriander leaves – 1/4 cup – finely chopped
  • Lemon juice – 1 tb sp

Mixed Masala Powder:

  • Red chilly powder – 1/2 tsp
  • Chaat Masala Powder – 1/2 tsp
  • Cumin powder – 1/2 tsp
  • Salt – 1/2 tsp
  • Coriander powder – 1/2 tsp

Procedure:

Cook Brinjal:

  • In a mixing bowl/ medium bowl add 1 liter water and 1 tsp salt
  • When water started boiling add Brinjal
  • Cover with lid and cook 10 mins
  • Turn off heat
  • Drain water and take out Brinjal aside
  •  Let them become cool

Stuffing Brinjal:

  • Add 1 tb sp red chilly onion chutney in each Brinjal
  • Keep all Brinjal in a plate

Batter:

  • In a bowl Add all batter ingredients
  • Mix well
  • Add water little by little and make medium thickness  of batter consistency

Vankaya Bajji:

  • Take one Brinjal and cover it with batter, slowly drop in medium heated oil
  • Repeat the same process add three Brinjal in oil
  • Flip bajji slowly when it changes golden brown and take out on paper towel
  • When all Brinjal fries are done
  • You can serve them directly or
  • Let them become cool and make masala vankaya Bajji

Onion and masala stuffing vankaya Bajji:

  • Chop a straight cut on Brinjal fries for stuffing
  • Add toppings onion, Carrot, coriander leaves, lemon juice & Mixed Masala Powder
  • You can also add nylon sev on toppings to extra zest 🙂
  • Serve immediately and enjoy with Red Chilly Onion Chutney/ Erra karam Chutney

Note:

  • Adjust spices according to taste
  • Instead of Brinjal you can also use Bajji mirchi ( Green chillies for Bajji )
