Potlakaya Pachadi πŸ‘Œ/ Snake gourd chutney || Side Dish || Rice 🍚

Side Dish: PachadiΒ

Any Indian meal contains Dal, curry, rice, roti and curd it’s so authentic and traditional to have a meal with curries and it gives you so much satisfaction with happiness. All these curries which I was prepared are the same process following from many generations and learnt from grand-grand parents. It’s like a chain process and love to know more and more from them.

Curry is a side dish either wet/ dry prepared out of vegetables/ leafy vegetables. It should be cooked and make sure it contain some amount of nutrients in it for good health diet. You can dip roti in curry and eat, you feel the taste of curry with flavours and it really delicious πŸ˜‹

In South Indians meal common recipe should be a side dish in every meal, this Pachadi suits with any rice/curd rice/ fresh hot rice with ghee if you like to have it with any phulka/ Roti then it’s great combination πŸ‘

Coming to Recipe, I don’t know how many of you know Bottle Gourd or tasted it or love this vegetable, but I like this a lot in any form either it could be fry, stir fry, curry or mix in Dal. If anyone of you doesn’t taste yet must try!

Today I prepared Pachadi means chutney with snake gourd and spices along with salt..finally ended with tempering πŸ˜‹

Let’s start with Ingredients and follows Procedure

Ingredients:

  • Potlakaya / Snake gourd – diced – 400 gms
  • Green chillies – 3
  • Garlic cloves – medium – 3
  • Curry leaves – 10
  • Tamarind pulp – 1 tb sp
  • Salt – 1/2 tb sp
  • Cumin seeds – 1 tsp
  • Oil – 1/2 tb sp

For tempering:

  • Oil – 1 tb sp
  • Mustard seeds – 1/2 tsp
  • Cumin seeds – 1 tsp
  • Curry leaves – 5
  • Hing/ asafoetida – 1/2 tsp

Procedure:

  • Heat skillet pan over medium heat
  • Add oil, cumin seeds, garlic cloves
  • Let them splutter next add chopped snake gourd & curry leaves
  • Saute a min and add curry leaves
  • Saute 5 mins till they become soft & tender
  • Let them become cool
  • Blend them into fine paste along with salt
  • While blending Don’t add water, if required add 1/4 cup of water = 60 ml
  • Keep it aside
  • Heat pan add tempering and hing
  • Saute and add blended paste
  • Cook 10 mins and till it seperates from pan
  • Serve with plain white rice / Brown rice /Β Daddojanam / Curd/ yogurt Rice || Temple prasadam || Navratri

Note:

  • Adjust spices according to taste
  • Double the ingredients to increase the quantity
  • You can also use ivy gourd instead of snake gourd, it also tastes great..
  • I used medium sized snake gourd it varies the quantity and spices if you make chutney with big snake gourd… so increase spices according to it
