Italian Recipe: Breakfast/ Dinner

Pasta is made out of Maida / all purpose flour/ wheat flour, as I used penne rigate pasta they are made from wheat flour. There are so many other types of pasta the way it looks different but tastes almost same.

Coming to recipe, today I prepared an Italian dish which is creamy, juicy and delicious pasta. This is simple to make in minutes if you have Cooked pasta.

Pesto is originated from Italy it is a kind of creamy sauce which contains basil, garlic, nuts, salt, cheese etc., You can also make Pesto sauce with SpinachΒ πŸƒand Broccoli instead of basil.

The sauce for pasta I prepared from spinach, cheese, nuts, olive oil, garlic cloves, spices and more. It turned out so rich in taste, shiny texture and tastes wow πŸ˜‹ It’s healthy too.

Kids who doesn’t like to eat spinach this is the best way,Β so follow the recipe and enjoy your Spinach Pesto Pasta. You can checkout my other recipes with spinach links at the end of the post.

Nutrition facts:

Spinach: Vitamins A,C & B6 Minerals iron, calcium, fiber, protein, potassium, sodium & magnesium

Lemon juice:Β Vitamins C Minerals iron, calcium, fiber, protein, potassium & magnesium

Badam/ Almonds:Β Vitamins B6 Minerals iron, calcium, fiber, protein, potassium & magnesium

Black Pepper powder:Β Vitamins C, K & B6 Minerals iron, calcium, fiber, protein, copper, carbohydrate, potassium & magnesium

Garlic: Vitamin C & carbohydrate

Let’s start with Ingredients and follows Procedure

Ingredients:

  • Pasta – 100 gms
  • Salt – 1 tsp
  • Cherry Tomatoes – 6 to 8 – chopped/ full ( as u like )
  • Olive oil – 1 tsp

Spinach sauce:

  • Spinach πŸƒ – 60 gms
  • Dried Basil 🌿 – 1 tb sp
  • Black Pepper powder – 1/2 tb sp
  • Salt – 1 tsp
  • Olive oil – 1 tb sp
  • Garlic cloves – 2 – peeled off ( chopped )
  • Mozarella cheese πŸ§€Β – 60 gms
  • Badam/ Almonds – 15 ( soaked in water for 10 mins )

Procedure:

Prepreparation:

Cooking pasta:

  • Heat 3 bowls of water in a large sauce pan
  • Add 1 tsp salt and let it boil
  • When water boiling Add pasta and let them boil for 5-7 mins
  • Strain water and Keep aside

Spinach sauce:

  • Wash spinach and keep aside
  • Add all mentioned spinach sauce ingredients in a mixer grinder/ food processor
  • Grind it till smooth paste
  • If required add 80 ml water
  • Blended smooth and sauce is ready
  • Keep spinach sauce aside

Process of Spinach Pesto Pasta:

  • Heat skillet pan or wok over medium heat
  • Add olive oil
  • Add chopped cherry tomatoes
  • Saute 30 secs
  • Add cooked pasta
  • Saute 30 secs
  • Add spinach sauce
  • Mix well &Β Toss occasionally
  • Cook 5-7 mins
  • Turn off heat/ cooktop
  • Serve immediately and enjoy 😊
  • Garnish with baby spinach and cheese ( optional )
  • Happy cooking and enjoy your day πŸ™‚

Note:

  • Adjust spices according to taste
  • Double the ingredients to increase the quantity
  • Instead of spinach you can also use fresh Basil leaves πŸƒ

  • I used mozzarella cheese instead of it you can also use cheddar cheese or Parmesan cheese πŸ§€
  • To make creamy texture I added soaked almonds you can also used walnuts Β or cashew nuts
