In South India there are many delicious and traditional recipes which can be made out of leafy vegetables and curriesΒ with vegetables.

Leafy vegetables is good for health if you take it in your daily meal either raw or cooked. Raw😟 Yes you read correct some of the leafy vegetables you can eat directly by adding them in salad πŸ₯—Β or in curries. They are spinach, cilantro, parsley, rosemary, lettuce, kale etc., let’s see how it helps and usages…

For example: coriander or cilantro you can have it on any salad, dressing, curries, Dal or Sambar etc.,Take one more example spinach, yes you can eat it directly or stir fry on salad or curries or with rice

Next lettuce, wow such a beautiful leaf and juicy too. Many of you ate burger right in it they add lettuce in burger πŸ”Β isn’t it tasty?

My suggestion if you haven’t had these three leafy vegetables directly in salad or any curry do try I hope sure you will like them. Most important healthy and works out full in your tummy πŸ˜‰

Coming to Recipe today I’m using leafy vegetable that is drumstick leaves. These leaves are rich in vitamin A & C and also contains high protein along with little bitterness.

What I thought is to eat this drumstick leaves in my daily meal so I prepared a blended powder out of it by adding spices and dal. It is a prior side dish in any South Indian breakfast recipes and it is an authentic gunpowder or Podi.

Nutrition facts of drumstick leaves:

Drumstick leaves: Vitamins A & C . Minerals iron, calcium and high protein

Urad Dal: Vitamin B6 and rich in iron, calcium, magnesium, potassium, fiber, sodium and protein

Bengal Gram: Vitamin A. Minerals iron, calcium, magnesium, sodium and protein

Let’s start with Ingredients and follows Procedure

Ingredients:

  • Drumstick leaves – 150 gms
  • Urad Dal – 2 tb sp
  • Bengal Gram – 2 tb sp
  • Dry Red Chillies – 4 to 5
  • Tamarind – 1 tsp
  • Jaggery powder – 2 tb sp
  • Salt – 1/2 tb sp
  • Oil – 1 tb sp

Procedure:

Prepreparation:

  • Wash drumstick leaves twice
  • Let them dry on paper towel/ kitchen towel
  • Don’t dry them under sun light

Process of making Munagakku Podi:

  • Heat skillet pan over medium heat
  • Add 1 tsp oil
  • Add Urad Dal, Bengal gram & dry Red chillies
  • Roast till golden brown
  • Turn off heat and add dry coconut powder
  • Saute and Keep it aside
  • Let it become cool
  • Next, again remaining oil in skillet pan
  • Add drumstick leaves
  • Roast them till crisp and color changes to dark green color
  • Turn off heat and Let leaves become cool
  • Now, add all roasted ingredients, salt, jaggery and tamarind in blender
  • Blend them till smooth powder
  • Munagakku Podi is ready
  • Take out blended powder in an airtight container
  • Happy cooking πŸ™‚ Enjoy your day 😊

Note:

  • Adjust spices according to taste
  • If you doesn’t like drumstick leaves, you can replace it with curry leaves or mint leaves. Rest of the process and spices is same
  • It preserves upto one month
