Soup recipe: Broccoli Cheese Soup 🍡

Soup is creamy liquid substance which can be made by combining many ingredients such as with milk, vegetables, sauce, cheese, salt , pepper & ginger- garlic these are ingredients are used to make any kind of soup, but varies from one to other cuisine.

Winter is the comfort season to have warm / hot soup and snacks. This is the season to enjoy hot cup of soup in cold winter at evening time 😊

So I started winter treats to share hot soup and snacks. They are many soup varieties but today I prepared a famous and delicious soup which is Broccoli Cheese SoupΒ have creamy and cheesy soup.

Broccoli: Vitamins A,C & B6. Minerals calcium, iron, magnesium, protein, fiber & potassium

Let’s start with Ingredients and follows Procedure

Ingredients:

  • Broccoli Florets – 15
  • Milk – 235 ml
  • Vegetable stock / Water – 235 ml
  • All purpose flour – 1 tb sp
  • Unsalted Butter – 2 tb sp
  • Salt – 1 tsp
  • Fine black pepper powder – 1 tsp
  • Mozzarella Cheese – 100 gms

Procedure:

Prepreparation: Blanch Broccoli

  • In a bowl / pan add 1/2 Ltr water, let it boil
  • Add washed & chopped broccoli florets
  • Let them cook for 5 mins
  • Strain water
  • Cook until crisp & tender
  • Broccoli cooked, keep it aside

Process of making Broccoli Cheese Soup 🍡:

  • Heat sauce pan over low to medium heat
  • Add butter let it melt
  • Add all purpose flour & mix well
  • Cook 1 min
  • Add vegetable stock/ water & milk
  • Stir & Let it boil
  • Reduce heat & add mozzarella cheese ,salt & pepper powder
  • Mix well
  • Cook more 10 mins, so cheese melts and combines with milk
  • Finally add blanched broccoli & mix well
  • Stir continuously
  • Cook more 10 mins
  • Broccoli Cheese soup is ready to serve
  • Serve hot/ immediately
  • Enjoy your day & Happy cooking πŸ™‚

Note:

  • I haven’t added salt While blanching broccoli if you would like to add 1/2 tsp of salt
  • Cheese makes your soup Creamy & heavy texture
  • Instead of mozzarella cheese, You can also use cheddar cheese/ Parmesan cheese
  • Adjust spices according to taste
  • Double the ingredients if you are preparing more quantity
  • Cheese contains high calories..You can easily avoid Cheese in soup… without cheese also it goes well
