Mexican Veggie Bowl: Breakfast/ Lunch/ Dinner

In last month I celebrated my special day with ice cream treat and I posted it was my 100th post but with in few days I found that Only one more recipe left to reach 100 recipes 😍

So I prepared a special and healthy bowl which is full of nutrition and protein. That’s Mexican Veggie Bowl it’s my favorite meal I had ever. I’m so much happy to share to all my loved followers and friends this is my second milestone in just 3 months.

Coming to my 100th recipe on my food blog,Β I inspired by chipotle restaurant where I had first time chipotle burrito Veggie Bowl. So I made some changes in the dish with Veggie toppings and avacado Spread which is super healthy.

Nutrition facts:

Red kidney beans:Β Kidney beans are a good source of several vitamins and minerals, such as molybdenum, folate, iron, copper, manganese, potassium, vitamin K1 and phosphorus.

Lemon juice: It contains vitamins A & B6, iron, calcium, magnesium, Potassium & protein

Bell peppers: ItΒ contains vitamins C & B6, iron, calcium, magnesium, Potassium & protein

Brown Rice: It contains vitamin B6,Β iron, calcium, magnesium, Potassium & protein

Sweet corn:Β It contains vitamin C, iron, magnesium, Potassium & protein

Avacado:Β It contains vitamins A, C & B6, iron, calcium, magnesium, Potassium & protein

Spinach:Β It contains vitamins A, C & B6, iron, calcium, magnesium, Potassium & protein

Today, I prepared Mexican Veggie Bowl with salsa, avacado, bell peppers, brown rice and more.

Let’s start with ingredients and follows Procedure

Step 1:Beans

Ingredients:

Red kidney beans – 80 gms

Grated garlic clove – 1

Oregano – 1/2 tsp

Salt – 1/2 tsp

Pepper – 1/2 tsp

Procedure:

  • I took red kidney beans you can also use black beans
  • Soak 80 gms of red kidney beans overnight
  • Boil in pressure cooker for 1 whistle and pinch of salt
  • Starin water in a cup keep it aside
  • Heat pan add cooked beans, strained water, grated garlic clove, chipotle powder, cumin powder, salt and oregano 🌿
  • Mix well
  • Let the beans soak in the flavours for 2 mins
  • Turn off Cooktop and take out in a bowl
  • Keep it aside

Step 2:Β Veggies

Ingredients:

Red Onion – 1/2 – sliced

Green Bell Pepper – 1/2 – sliced

Yellow Bell Pepper – 1/2 – sliced

Olive oil – 1/2 tb sp

Salt & Pepper – 1 tsp

Procedure:

  • Heat skillet pan over medium heat
  • Add oil, red Onion
  • Saute 2 mins
  • Add chopped bell peppers
  • Saute more 2 mins till they are nice & tender
  • Add oregano, salt & pepper powder
  • Mix well
  • Take out in a bowl
  • Keep it aside

Step 3: Salsa

Ingredients:

Seedless tomato – 1/2 – finely chopped

Red Onion – 1/4 – finely chopped

Cilantro – 2 tb sp – finely chopped

Grated garlic – 1 – clove

Lemon juice – 1/2 tb sp

Salt & pepper – 1 tsp

Procedure:

  • Take a bowl add chopped tomato
  • Add onion, clintro, grated garlic clove
  • Mix well
  • Next add salt, pepper powder and lemon juice
  • Mix well
  • Keep it aside

Step 4: Sweet corn

Ingredients:

Boiled sweet corn – 80 gms

Salt – 1/2 tsp

Lemon juice – 1 tsp

Procedure:

  • Boil sweet corn for 10 mins in hot water with pinch of salt
  • Drain water
  • Now add salt & lemon juice
  • Mix well & Keep it aside

Step 5: Avacado SpreadΒ 

Ingredients:

Ripped Avacado – 1/2 – Mashed

Red onion – finely chopped – 1 tb sp

Cliantro – 2 tb sp – finely chopped

Salt – 1/2 tsp

Lemon juice – 1 tsp

Procedure:

  • Take a bowl
  • Add ripped avacado ( mashed ), onion and cilantro
  • Mix well
  • Next add salt & pepper , lemon juice
  • Mix well
  • Keep it aside

Step 6: Brown Rice

Ingredients:

Brown Rice – 1/3 cup – 120 gms

Water – 360 ml

Cliantro – 3 tb sp – finely chopped

Salt – 1 tsp

Lemon juice – 1 tb sp

Procedure:

  • Wash twice & soak brown rice for 1/2 an hour
  • Add 1 cup = 3 cups of water
  • Now cook rice in rice cooker
  • Rice cooked well
  • Take some rice in a bowl , add cilantro, salt & lemon juice
  • Mix well
  • Keep it aside

Step 7: Leavy vegetables

Ingredients:

Spinach – 15 leaves – chopped

Actually, in Mexican Veggie Bowl adds lettuce for topping. Right now, I didn’t have lettuce so replaced with Spinach πŸƒ

Mexican Veggie Bowl:

Procedure:

  • Get set altogether
  • Take a burrito bowl/ any bowl available at home
  • Add one layer of brown rice
  • Add prepared toppings on rice one by one
  • Add avacado Spread at center
  • Garnish with spinach

Note:

  • Toppings you can create your own as you like, it can be anything
  • It’s completely customizable
  • Instead of brown rice you can also use normal rice
