Pickle is a popular side dish which is made out of vegetables or fruits. Some pickles can be preserve for years and few pickles for months but most important thing about pickle is it remains same taste till end, if you prepare it with exact ratio of spices and oil.
Pickles can be prepared in many varieties which varies from place to place. In India it is prepared by chopping veggies, adding spices, asafoetida, turmeric powder and edible oil.
I like pickles a lot with hot rice and ghee at lunch / dinner time.ย I learnt how to make pickles from my Dad, he makes pickle with love it was delicious ๐
Tomato ๐ ย Pickle is the best combination with any South Indian Breakfast such as idly, Dosa, Upma, Rice & ghee etc., when you have less time to prepare chutney easily you can replace it with tomato pickle ๐

Today I prepared Tomato ๐ ย pickle with spices and garlic
Let’s start with Ingredients and follows Procedure
Ingredients:
Tomatoes ๐ ย – 1 kilograms – fresh
Red chilly powder – 1 1/2 tb sp
Salt – 1 tb sp
Tamarind extract – 1 tb sp
Fenugreek seeds – 1 tsp
Mustard seeds – 1/2 Tbsp
Turmeric powder – 1 tsp
Oil – 150 ml
For Tempering:
Mustard seeds/ Avvalu – 1/2 ย tb sp
Cumin seeds/ Jeera – 1/2 tb sp
Curry leaves – 4 to 5
Garlic cloves – medium – 5 to 6 – chopped
Hing/ Asafoetida – 1/2 tsp
Oil – 1 tb sp
Pre-preparation:
- Dry roast fenugreek seeds
- Till color changes to golden brown
- Let them become cool
- Blend smooth powder in mixer grinder
- Next add Mustard seeds & blend smooth powder
- Keep grounded mustard & fenugreek seeds in a cup
- Chop garlic cloves & keep aside
Procedure:
- Heat skillet pan add oil
- Add chopped tomatoes
- Cook 15 mins
- Add tamarind extract, chilly powder & salt
- Mix well & cook 5 mins
- Add turmeric powder and mix well
- Let it become cool for 20 mins
- Blend smooth paste & again add in pan
- Add grounded mustard & fenugreek seeds powder
- Mix well
- Add 30 ml oil
- Cook 20 mins
- Add 1 tb sp oil add mustard seeds, cumin seeds
- Let them splutter
- Add chopped garlic cloves
- Add curry leaves & asafoetida
- Mix well and fry till color changes to golden brown
- Add this tempering to cooked tomato pickle
- Mix well
