Simple recipe: Healthy snack : Black beans sundal

Bored of eating regular snack try this sundal, it’s tasty and healthy which contains Black eyed beans, grated coconut & carrot which has high value of vitamin A.

It’s very simple to prepare all you have to do is

Pre Preparation :

First soak black eyed beans for 6 hrs or overnight. Cook them in pressure cooker with sufficient water and salt as per taste for 3 whistles, if it is not soft in texture again cook for more 2 whistles.

Today, I prepared black eyed beans sundal which is easy to prepare and tasty too. It contains cooked black eyed beans, grated coconut, carrot πŸ₯•Β with tempering.

Let’s start with ingredients and follows Procedure

Ingredients:

Black eyed beans – 240 gms

Powdered coconut/ fresh grated coconut – 2 tb sp

Grated carrot – 2 tb sp

Coriander – chopped – 2 tb sp

For Tempering:
Mustard seeds/ Avvalu – 1/2 tea spoon
Cumin seeds/ Jeera – 1/2 tea spoon
Urad dal/ Minapappu – 1/2 tea spoon
Curry leaves – 4 to 5
Dry Red chillies – 2
Asafoetida/ Hing – 1/8 teaspoon
Oil – 2 tb sp

Procedure:

  • Heat pan on medium heat
  • Add oil & tempering
  • Let them splutter & saute
  • Add cooked black eyed beans
  • Give it a toss
  • Saute 30 secs. Don’t over cook because black eyed beans already cooked
  • Add powdered coconut and Saute
  • Switch off burner/ cooktop
  • Add grated carrot & chopped coriander
  • Saute gently
  • Offer Black eyed beans to Godess Durga Mata
  • You can serve it hot as a evening snack
  • Happy cooking 😊
