How to make Vangi Bath Masala Powder and Rice: Step by step process shown below :

There are many different special recipes which can be prepared with rice and vegetables in South India ๐Ÿ‡ฎ๐Ÿ‡ณ

One of the special rice recipe, I chose to prepare for Navratri special. This rice is Famous in Karnataka it usually prepared with Brinjal and mixed spices masala powder which enhances the taste of rice.

Nutrition facts of Brinjal/ Egg plant :

Vitamins : C & B6

Minerals : Iron, Magnesium & potassiumย 

In South India, most of the people like Brinjal / Egg plant. It can be prepared as Gravy curry/dry/sambar and rice.

To this special rice you need to make masala powder is prepared by using urad Dal, Bengal gram, cloves and other spices which gives more richness in texture.

Today, i prepared Vangi bath main ingredient is Brinjal ๐Ÿ† and spices.

Let’s start with ingredients and follows Procedure

Ingredients:

Vangi bath masala powder:ย 

Urad Dal – 2 tb sp

Bengal Gram – 2 tb sp

Coriander seeds – 1 tb sp

Cumin seeds – 1 teaspoon

Dry Coconut Powder – 2 tb sp

Dry red chillies – 7 to 10 ( more/less according to Spicy)

Cloves – 5

Cinnamon – 2 small pieces

Vangi bath / Brinjal fried Rice :

Bringal/ Egg plant – Diced – 250 gms

Cooked rice – 1 bowl – 160 gms

Vangi bath masala powder – 3 tb sp

Cumin seeds – 1 teaspoon

onion – sliced – 1 cup

Bay leaf – 1

Oil – 2 tb sp

Tamarind extract – 1/3 cup

Salt – 1/2 tb sp ( adjust according to taste)

Fried cashew nuts – 2 tb sp

Procedure :

Vangi bath masala powder:

  • Dry roast all the mentioned ingredients separately
  • Let them become cool
  • Add spices in mixer grinder
  • Make smooth powder and keep it aside

Vangi Bath / Brinjal ๐Ÿ† Fried Rice process:

  • Heat frying pan on medium heat
  • Add oil, jeera/ cumin seeds & bay leaf
  • Saute 30 secs
  • Add sliced onion & saute 2 mins
  • Add diced Brinjal/ Egg plant and saute 1 min
  • Cook 5 mins by closing with lid
  • When Egg plant/ Brinjal half cooked add tamarind extract and salt
  • Mix well
  • When tamarind extract becomes thick and started boiling.
  • Add 3 tb sp of vangi bath masala powder which has been prepared
  • Mix well and cook 2 mins
  • Add cooked rice and fried cashew nuts
  • Mix gently
  • Dish out in a serving bowl
  • Serve Vangi Bath with salted potato chips/ Raita ๐Ÿ˜€
