Healthy & Tasty Vegetable Vermicelli Upma

Ingredients:

Vermicelli/ Semiya – 1 cup

Water – 1 and 1/2 cup

Mixed veggies –

carrots,beans,sweet corn, green peas – 1/2 cup

Onion – chopped- 1/2 cup

Tomato – chopped – 1/2 cup

Ginger – finely chopped – 1 tb sp

Fried cashew nuts – 1 tb sp

Coriander – 1/2 cup

Green chillies – chopped- 2

Salt – as per taste

Oil – 2 tb sp

For Tempering:
Mustard seeds/ Avvalu – 1/4 tea spoon
Cumin seeds/ Jeera – 1/2 tea spoon
Urad dal/ Minapappu – 1/4 tea spoon
Bengal gram/ Senagapappu – 1/4 tea spoon
Curry leaves – 4 to 5
Oil – 1 tb Sp

Procedure:

  • Dry roast vermicelli for 5 mins
  • Add oil on medium heated frying pan
  • Add tempering
  • Add green chillies and ginger pieces
  • Saute 1 min
  • Add chopped onion and saute 2 mins
  • Mix with veggies and saute 2 mins
  • Add chopped tomato
  • Saute them till mashy tomato
  • Add required water and salt
  • Boil water
  • Add Roasted vermicelli and stir
  • Close with lid
  • After one to 2 mins check
  • Cooked well
  • Garnish with cashew nuts and coriander
  • Serve hot withΒ Spicy Roasted chickpea Powder / Pappula podi / Bhuna Chana powder
